UK Holiday Recommendations

Folks,
I am looking for recommendations from fellow PH'ers for a UK holiday destination this summer.
Some background:
1. It'll be me, the Mrs and our daughter who will be approx. 18 months old by then.
2. Cheap as chips would be good - I am currently unemployed and while we are not skint we are not exactly 'flush' either.
3. Reasonable gaurantee of nice weather (Mrs has two weeks off work - w/c 24th August)
4. Lots to do for our daughter, but still has nice places to eat for us in the evening.
Before our daughter was born the Mrs and I went abroad a couple of times a year so we don't have much experience of holidaying in the UK. Our last holiday as a family was one of those cheap deals through The Sun @ Haggerston Castle (and it was dire!).
Also - we don't want to spend pretty much the whole day travelling (we'll probably drive to the holiday destination) so the south coast is probably out. We live just outside Edinburgh.
Any thoughts?
