The best tyres I ever fitted to my Scoobs were Goodyear Eagle F1s - way better than anything else - fantastic wet weather grip.
I think a lot of it is down to personal preference - I prefer Bridgestone SO3PPs to Eagle F1s - I found the F1s to be too "woolly" on the limit, whereas the SO3s seem to be a lot sharper, and give more feedback. This is on my P1 with 17" rims.
To get the best out of a classic Impreza with standard suspension setup, you have to pretty much wring it's neck, trail-braking into corners to get a decent turn-in & set up a drift.
The only thing is that if you get it wrong, it's probably going to be at high speed, and pretty expensive.
I recommend a driver tuition day with someone like 1st lotus

I bought my impreza recently and it had Goodyears fitted until I replaced the wheels, must say - the BF Goodrich that came with my new Pro Drive's are far more competent - personal opinion!
