Rolling the edges of sheet metal

Actually, this isn't car related, but it's metalwork related, so I thought I'd ask anyone who might know. I'm working with fairly thin sheet steel to fabricate some makeshift armour for a re-enactment event I'm going to.
I've made leg plates and for safety, I've rolled the edges by hammering against a straight edge, then against a cold chisel, and then finally hammering flat. Unfortunately, it hasn't given the straightest of finishes. Acceptable, but not brilliant.
Anyway, until I graduate to a gauge of steel that doesn't require edge-rolling, is there any sort of tool or technique that's best for doing this?
