Package holidays

Single Dad and after a couple of years of taking my 3 camping in this miserable country (I know there are great places but the weather has always been cold and wet), I thought I'd try a package deal but no one, on websites anyway, seems to cater for a former family of 5 now 4.
I could just book it and then we all squeeze on to just 2 beds in one room but my 12 year old daughter won't stand for that and the idea of being stuck with her younger brothers 24/7 would just fill her with dread. At the same time there is the cost of a second room but no guarantee that she would be next to us and I don't won't her on her own.
I can't afford Mark Warner, like we used to do every year so any ideas for warmth, a couple of hours flying and possible all inclusive?
Seen a few around the £2k mark for a week but going via the web, I can't get any idea about the accommodation.
