-does your water temp guage go up 'n down?

...after sorting out my anti-freeze last night I went for a quick blatt and noticed my water temp guage was a bit more steady.
-According to the bible it should sit there 'rock-steady' at 90. Mine never has though, gets to the 90 mark, fan comes on, drops noticably lower than the 90 mark and repeats. Never over-heated, never lost coolant -anything to worry about?
